Mmmm Pies

Like many of you, I am sure your home is smelling sweet with the wonderful baked goods that come with the holiday season.  If not, come on over!  My house has a 24/7 sweet smell of baked goods because this kitchen is nearly never closed!  I don't mind.  Last night I clocked about 4 hrs of sleep.  It just comes with the holiday baking season.  I wanted to share something with you that I don't really ever do. I want to share my pumpkin pie recipe.  Now for those of you out there that are always telling me that your crusts don't turn out pretty, don't stress... I've got a few secrets up my sleeve.


Pumpkin Pie is really a pretty easy pie to make.

Ingredients:
1/8 tsp. cloves
3/4 cup of sugar
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. ginger
1/2 tsp. nutmeg
2 eggs
1 15 oz can of 100% pumpkin (sometimes I use my own pumpkin puree from my very own pumpkins)
1 can of evaporated milk
One pie crust (store bought or homemade)

Baking Instructions:
Preheat oven to 425 degrees F

Mix dry ingredients together in a small bowl.  Set aside
Beat in your mixer the 2 eggs then add the pumpkin. Gradually add your dry ingredients. Slowly mix in your evaporated milk and mix on low or stir until fully incorporated.

Pour into your pie shell.

Here are a few tricks I have to making your pie crusts look pretty:
 Make a double batch of pie crust so that you have plenty of dough to work with.  I hate it when my crust is uneven all around and looks lopsided.  Now one thing I love and I believe it was before Martha Stewart came up with the fabulous idea because I've been doing it long before I heard her chime in about it, is to use festive cookie cutters to cut out pie dough to  line around the edge of my pie.  This way you don't have to worry about how your crust looks because the cookie cutter shapes cover it anyway and it always looks so pretty.

To apply the shapes to the crust use a basting brush and one egg white.  Whisk the egg whites for a few seconds with a fork and then brush your pie crust with the egg whites and then again on your shapes and gently press the shapes onto the edge of your crust.

Bake at 425 for 15 minutes and then reduce temperature to 350 and bake for 40-50 minutes or until it looks cooked.  I know this by shaking my pan a little bit and it doesn't look like liquid still in the center.  Some recipes will tell you to place a knife in the center and if it comes out clean then it is done...but to me that ruins the whole look so I don't follow that one step. Cool for a few hours and then refrigerate until ready to eat.  And of course don't forget the Whipped Cream!

Voila!  You've got Pumpkin Pie!

MRI Images and the Gift of a Rose

Dear Friends,

Some progress is being made.  We have a few images of the MRI. We are hoping to get more but the internet is slow there so it takes a long time to load the images.  I have 5 now 11 of the 86 images.  We also have a few friends of ours who are willing to send these images on to neurosurgeons and will give us a second opinion.  I don't really have any experience in reading these images but maybe you or someone you know may.

My husband and I have decided that we will be praying for Rose and for her neck and since we can't physically touch her while praying we will touch the pictures.  Will you join us?  We need people to be praying for Rose and for her Doctors and for God's provision.  Please pray!

Time is moving fast and we are faced with the need for surgery to happen soon.  We need to raise more funds.  We have been able to pay for her MRI and consultation as well as her transportation to and from the hospital which is a 4 hr. journey.  In order to get the surgery going we need to raise more.  Please consider giving towards this cause.  We need around $7000-$8000 more than what we already have.

3 Miracles


Firstly we want to thank you all for your prayers and support.  Through your giving we have been able to send Rose this past week for her MRI.  Here is a clip of what my initial conversation looked like when I received word
 Here is what my brother in law Reverened Charles said :
They ran two tests on her: MRI and Contact Test, an extra test like I suspected. They confirmed the tumor between c5 and c6 as well as a lot of fluid building up along the spine. That is why she is in much distress. According to the doctors, she is fast losing her sensation and locomotion.  In the next six months to a year, if we don’t do something, the whole system may collapse. In fact the doctors were wondering why she is still breathing and moving, their conclusion is that “it is a Miracle” I prayed that the miracle will come to final fulfillment and they said, Amen to that!

Thus the FIRST MIRACLE
After getting the prognosis we asked the obvious question...How much? We knew that this stage would be costly and are not surprised by the cost but are just wondering how the Lord will provide this amount in the short amount of time needed. This is going to cost around $8-10 thousand dollars. Ah yes that is what I said! This amount is all inclusive including her physical therapy afterward. We know that with the holidays around the corner that everyone's budget is already stretched and  is no easy task.  We have to trust that God knows her needs and will open the door for this to happen. 

Thus the SECOND MIRACLE
Finally, my husband and I called the Doctor and spoke with him. It is nothing like just getting on your phone and calling up your doctor and having a regular conversation. The phone lines are not the easiest or clearest making it hard to carry on a "normal" conversation. What we did hear though was that her condition is really serious and that he cannot guarantee that she will recover completely. My heart is broken, yet I have to trust HIM who is able do to measurably more than I can ever imagine. Her life will be prolonged but she may not recover due to the damage already done. Had she seen the DR. 2  years ago she would be walking, according to what the doctor had said.  With this news we reached out to some of our friends with medical connections and have been able to get some feedback that they are willing to offer up second opinions. We are just now waiting to get a copy of the images...which is a whole other challenge in itself. How do you scan images from Nigeria, so that we can show these willing people to help us? I offered up a few solutions so let’s see if we can get something within the next few days. In the meantime we are praying that her quality of life does improve and exceeds expectation because God is able after all, and that she can withstand the surgery without complication.

Thus the THIRD MIRACLE

Its all about the Dash!

My daughter Nnenna is the one with the pigtails :) 


Today my daughter Nnenna performed in the Urban Impact Childrens Choir (video clip at the end of this blog.) (please keep reading and don't just skip to the video :)  I was so proud of her!  When I was a little girl I used to be a part of the kids choir at church with the same amazing Sheri Turnbull!  Lets just say that when I was a kid I loved her and as an adult I am thankful that my daughter gets to have her and love her as well!  That is my dream someday to lead a childrens choir (preferably in Africa)!

This month at church is also missions month.  Growing up I used to always love missions emphasis week.  Missionaries would come and speak and let us eat weird but yummy food and we would get to stay up late and go to church every night.  My heart for missions did grow through these experiences.  For that I too am also glad that my children are getting that experience.

The timing of this missions month has been really interesting as my husband and I have more recently been talking about what is our purpose, where are we going, what are we doing, what is the Lord asking of us etc....  We have a burning desire to love people, to care for people, to create relationship with people, and to be Christ to people.  Somehow though, life does get so busy that the week passes and I will wonder what I even did that week.  My husbands life story is one that you may have heard if you are close to us but one that most do not know.  Someday I hope he shares it, but with his story comes a great responsibility that he cannot ignore that others out there really need 1.Jesus, 2. Love, 3. Help.   That is what we desire to be and do but still wrestle with how that all looks for the present and how it will look in the future.  Our hearts are so big, yet it all seems so hard to make happen.  This is what we wrestle with but for now are just seeking the Father and continuing to live our lives in the now as missional as possible.

You can't reap a harvest if you don't sow a seed!
Do you remember when you were in your youth and someone would ask you what you were going to be when you grow up or what you were going to do with your life?  I pondered that thought today and really hope that someday what I would have said comes true!  To run an African Childrens Choir, to educate in Africa, to open up a school or non profit organization to help others there and to make an impact.  What was it that you thought you were going to do with your life?  Are you doing it?  Are you even close?




I once heard from a dear friend of ours that when you one day die your tombstone will have two dates on it and in between those two dates will be a dash.  The dash represents your life.  How are you going to live your dash?

                                   My prayer is that we all can make every minute count!

     This holiday season many of you already know that my husband and I are on a mission to help Restore Rose!  This week is a huge week where she will meet her doctor, get an MRI (which is not an easy task in a 3rd world country) and consult with the Doctor.  We will most likely learn what exactly is going on in her spine and will know what the next steps are.  Please join us in praying for Rose!  If you can give to help us with her medical expenses we would also appreciate that!

Amanda's Sweets

Here Nnenna and I made a cake for the late Jude Agwuocha on his last birthday.
Today I was reflecting on my little baking adventure.  Three years ago I would have never imagined that people would see me as a "baker."  I have always been one to be in the kitchen. Since childhood, baking chocolate chip cookies was my thing.  In college I would bake for my roomates.  When I first met my husband I used to kick him out of the kitchen because, "I knew what I was doing!" and of course He didn't! During the holidays I would pride myself in baking dozens of cookies to share with friends, teachers, neighbors etc... While living in Nigeria, my husband bought me a small oven and there next to my mother in-laws wood burning stove would be myself baking away cookies on Christmas day for all the village visitors to get a treat!  All of that I saw as me just being myself, a homey, feel good, cozy kind of person who loved to invite others into that world.  Little did  I know that this would turn into something more.

birthday party in the village!

Three years ago my husband and I returned back to the states after a year in Nigeria.  We learned shortly after that Barnabas' mother was having heart troubles.  We tried to no avail to find someone who could help her.  That was when we learned that a good friend of ours who is a Cardiologist was traveling on a medical mission trip to Cameroon which is the country next to Nigeria.  We so badly wanted that opportunity to send Mama to see Dr. Johansson.  My husband was working different smaller jobs at the time and I was homeschooling for a family and babysitting and doing whatever I could to make ends meet.  We knew we couldn't make it happen on our own.  That was when I decided to make pies for Thanksgiving that people could order and I would save all of the money from that to put towards that project.  Sure enough people gave above and beyond and bought pies and it was glorious!  I was so amazed!  After that people wanted desserts for Christmas and then birthdays and then baby and bridal showers and then weddings and on and on.  I did not make this happen but believe that God has allowed me to have what I need to do this so that I can be a blessing to others in need.

Samuel Ohaegbulam is Chief Neurosurgeon at Memfys Hospital. He graduated from Cairo University Medical School in 1967 with Honours, had his neurosurgical training in the United Kingdom including the famous Atkinson Hospital of St George’s Medical School, London. He had Microneurosurgery Training at Henry Ford Hospital, Detroit, USA and pioneered the neurosurgical service of the University of Nigeria Teaching Hospital. He joined the University of Nigeria as Lecturer 1 in 1974 and was promoted to full Professor in 1980. He was also Chief of Neurosurgery at the North West Armed Forces Hospital, Tabuk, Saudi Arabia from 1989 to 2001.

He held many positions in the University of Nigeria including, Head of Anatomy, Associate Dean of Medicine, Dean of Medicine and Deputy Vice Chancellor and Head of Enugu Campus of UNN.

He is the author of Geographical Neurosurgery, the First On-Line Book of the Congress of Neurological Surgeons USA as well as numerous Chapters in Books, Scientific Journals and Conference Proceedings. He is the Pioneer President of the African Federation of Neurosurgical Societies from 2007.

He has extensive experience in surgery of tumours of the brain and spinal cord and Spinal Surgery including Spinal Instrumentation.

Restoring Rose: Daily Reminders

All day today I have been reminded of my sister in-law Rose.  As I was driving my daughter Nnenna to school today she pointed to the tag on my tea bag and said why is there a "rose" on that.  That got me thinking about Rose.  Then the thoughts of Rose started to flood my mind.  Our third daughter's middle name is Rose and my daughter got a bouquet of roses for her birthday and then of course I kept thinking of other ways "rose" was incorporated into our lives.  I then started to look back at my albums on Facebook of pictures of when we went to visit with Rose and the rest of the Agwuocha family.  Time sure does pass quickly.  In those pictures Nnenna was so little.  It was about 5 years ago now when I first met my sister in-law Rose.  She is so beautiful!  Inwardly and outwardly.  She has such a sweet and gentle spirit and never, never complained or asked for anything.  At this point in her medical journey she was limited on the right side of her body but was still able to walk with a limp and do some things.  You will notice in one of the pictures that my husband is ironing for her.  Yes they still use the old fashioned iron with the coal to keep it hot.  My husband noticed her trying to iron when he stepped in and finished the job for her.  She has two lovely and energetic boys who also never complained.  It has been 5 years now and I'm sure these little boys are not so little anymore.  Their little lives have been tough.  They have had to watch their momma suffer.  So much that they would even take her to healing services in desperation of just wanting their mother to be well again.  Rose currently is in a state of desperation.  She has not improved in the last 5 years yet has increasingly gotten worse.  She now can no longer walk and is losing feeling on both sides of her body.  She exclaims that the pain is intense.  In my heart all I want for her and her family is to know that they have a God who loves them deeply and that really does care for them.  They have not experienced anything but hardship. It is my pleasure and joy to be the love of God to them and to bless them with this opportunity to finally get the help that she so desperately needs.  If my husband and I could do it on our own, we would.  Unfortunately with a need so great, we are completely unable to do it all.  For that we have come to all of you to ask you to be a part of this.  We are so grateful for you and for your willingness to be the love of God to Rose.  She has never been online before and has no idea that this fundraiser is even happening but I am sooo thrilled that it is happening.  She is about to be blessed BIG time!!!  If you can give towards this cause we would be ever so grateful.  If you know of anyone who would help please pass it along to them.  I would love to see that we reach our halfway mark by the end of this week.  If we do then we can start the process to getting her an MRI.  After that then she will have a consultation and then most likely surgery.  If you have any questions please ask.  We love you all!

Restoring Rose!

I will enter is gates with thanksgiving in my heart, I will enter His courts with Praise!

Dear Friends,
I am not sure how to put this update before you. I thought I would be writing to you the usual updates on Jude’s family alone. However, I am writing to you to update you on Jude’s family and more. The situation has left me with no other choice but to share updates on Jude’s children but additionally, reach out to you on behalf my sister Rose. My mother had 8 surviving children. We all grew up in a happy (although poor) but protected home. My sister Rose is my immediate older sister.
Her Story: She had just finished Fashion and Design training in Lagos in 1994-1995 soon before I left to come to the USA. She returned to the village and was working from home sewing dresses and clothes for kids and ladies in the village. She had great skills and people loved her handy-work and were bringing her business all the time. She was helping support the family with the few dollars she made.
Then, Iwas living in Gabon when one day I received a call saying that Rose suddenly fell off her sewing chair and could not move any part of body but was in excruciating pain. She was rushed to the hospital and with many prayers she got better after weeks.
Rose got married after a few years and had two healthy kids. After few years longer she got pregnant again, but this time the pregnancy was a difficult one. She and her husband lived a very remote part of Nigeria away from the family. She had a painful labor and delivered her child, but still remained in serious pain after. It was not until the next day, it was discovered that she had been carrying twins in her pregnancy all this nine month period. By the time the quack nurses and doctors got around to it, it was too late for the second baby in the womb. The baby died in the womb. Rose also became seriously ill again and this time could not move the right side of her body. To add salt to the injury, a couple months later the surviving twin also passed away.
Ever since this tragic experience, we have made effort s to get Rose the right medical help, but all to no avail. When Amanda and I lived in Nigeria, I carried Rose in my hands up and down the stairs of the so called hospitals where the sick and the helpless look for a help that often will never come even after they have sold everything they have and give the hospitals to get that help.
 On one occasion as I was taking Rose from one hospital to another at the doctor’s recommendations, I was so tired and hopeless; I carried my sister back to the car, and led her to the Lord. I know the Bible says that it has not entered anyone’s mind what the Lord prepared for those who love him. But it seems to me also that hell will be like a place where you do all the right things to get help, and help will not come, and no one will notice.  Friends, people are dying left and right in the hands of doctors in Nigeria every second for “simple” things such that no one would even have to stay overnight in the hospital elsewhere. (Case in point: Jude my brother who passed away because of an abscessed tooth).
The recent news on Rose:
Almost two months ago, I got another heart wrenching call from my brother saying that Rose was seriously ill again. This time she is no longer able to move the left side of her body. I was in despair; I was speechless and helpless at the same time. I became a little irate with God. I had my doubts and my heart started to steam with the most common questions in my life (WHY LORD, WHY ME, WHY US, and WHY ROSE?)  How does anyone define or distinguish between a blessing and a curse, what did I do to you Lord? Can you talk to me Lord? I mean the questions were streaming to me effortlessly.
While I was eating my bread of sorrow, Amanda turns to me a said to me, “You have to do something” I looked at her with my irate face and said to her, “there isn’t anything else I know I can do.” You can notice I was rather more interested in eating my bread of sorrow than thinking of a solution. I was pretty much giving up. But Amanda would not have it, and went online right at midnight researching for good hospitals in Nigeria, and researching for any doctors and organizations that may be able to help. Shortly, around 1 in the morning, Amanda was able to find a website with a Doctor from Texas (Dr. Camazine). Dr Camazine went to school in Harvard and has had a medical mission ministry around the world for years now (And Nigeria included). He visits Nigeria several times each year where he performs all kinds of surgeries and trains local doctors to do the same. Please visit his blog http://earthwidesurgicalfoundation.blogspot.com/. Amanda reached out to his organization by email and a phone call to the Dr. They were very helpful and accommodating and informed Amanda that Dr. Camazine was on his way to Nigeria the next day.  He gave us the dates and the area where he was to visit and asked that Rose come directly to see him. He did see Rose while he was Nigeria (His clinic was only 4 hours away from where Rose lives). After CT scan examination, Dr.  Camazine suggested that Rose has tumor growing near her spine at C6. He recommended not to waste any time. He said we should take Rose to a teaching medical school in Ibabdan Nigeria, which is very far away from Rose who now is immobile. But that is the best place to go for Neurosurgical issues such as Rose has.
Friends, it is such needs and situation that Rose and my late brother Jude’s children are in today that birthed our passion to do something in Nigeria “someday.”  I lived around it all my life all over Africa, but I hardly imagined that I will be indirectly in the situation. It is a life experience that the most vulnerable and poor go through in Nigeria that will ache anyone’s heart.
So why am I writing to you?
Rose needs help. Rose needs prayer. She needed this help 12 years ago if she had been diagnosed properly.
Friends, you have been good to me and my family, and I do not take you for granted.
If you remember my life and my life story, you may get an idea how tired I am, but if you have been in the same shoes as I am in now, you also will probably get the idea that it is beyond humbling to be writing this email to you. But what are my options? None. I must be that voice for her.  Will you join me?
How you can help me cry out on behalf of Rose:
Pray for healing, for good doctors/hospital care/ financial provision as they do not have health insurance.
Do you know of any Neuroscientist?
Time management for us so we do not tarry too long before we get Rose some help.
Pray that I am able to hear what God is saying through it all.
Pray for strength to take whatever answer that God gives us.
So here on our table we hold the responsibility of continuing to care for Jude’s children as well as caring for Rose’s condition.  We have successfully been able to fund the children’s education through the donations that were given to the Jacobs Well Foundation for this past year.  Currently the funds are exhausted and come January the next round of school tuition will be due. Beyond their educational needs are the children’s well being.  Your giving also helps to feed, clothe and provide medical care for these children.  Please continue to give towards this.

Jacob’s Well Foundation is a 501(c)(3) non-profit organization established to provide support for the families of terminally ill or recently deceased providers. The organization was begun in 2006 in response to the needs of a family of eight children who were losing their father to malignant melanoma. Since then JWF has continued to provide support for this family as well as a number of other deserving and needy families. Our administrative needs and expenses are met by volunteers allowing us to send one hundred percent of donations to the supported families. As a 501(c)(3) organization we provide year end donation receipts for tax purposes.
With Thanksgiving right around the corner, Amanda and I like to annually have a project of giving.  This year we are dedicating Rose’s situation to that project.  A PayPal fundraiser has been set up to help assist in her medical costs.  She currently needs about $2000 to get an MRI and begin the process with the neurologist.  After that, most likely will come surgery that will require life support.  If you are able in any way to contribute towards this project we would greatly appreciate it.
